The joy of eating…

Well for all those that have been following on Twitter this week know it has been a week from Hell. Some how I let the stress of “covering the asses of the masses” get to me. For all that don’t understand that, I am a denim designer by day. I had to stop and have a reality check…I am not curing cancer, I am not a brain surgeon, I’m not even saving puppies so how bad can it be. So yesterday morning I took all of this under advisement and decided that it was going to be a good day. I was going to affect all I could and the other stuff I was just going to let go. It really helped, the day was great.

Now there is a down side to this…I seem to be like no other, when I’m happy and in a good mood I want to cook and eat. Cooking at our house is like a sport. You only start knowing something great is going to come out of the effort and last night was no exception. I did however keep it clean…so I’m not sure it was a true cheat meal but it sure tasted like it, I guess those are the best kind.  Now that I think about it the mash potatoes probably fall under cheat, but they were so good.

Dinner: Turkey Meatloaf, Mash Potatoes, and Green Peas…yum

I also tried my hand at creating a carb friendly dessert (chocolate coconut pudding)…only about 6 carbs per serving but calorie heavy. This was tasty but needs a little more work to be perfect. I am going to try this recipe again this weekend to see if I can get a better consistency, but the taste was just like an almond joy. Oh how I love coconut!


I will share the meatloaf recipe as it was great, well in my opinion. I am still going to work on tweaking the sauce on top, but that won’t stop me from making this a regular in our house.

    Meatloaf sounds great. But, um, we’re also going to need the recipe of the carb-friendly chocolate coconut pudding. One of the world’s most perfect combinations; please share!!
